Rich Almond Milk Eggnog

This rich almond milk eggnog is dairy-free, and suitable for anyone who is lactose intolerant or just prefers plant-based milks. Its richness comes from the addition of a duck egg, and it has a thinner texture than commercial eggnog.
INGREDIENTS
1 duck egg
1 cup vanilla almond milk
1 tablespoon white sugar
1/4 teaspoon vanilla extract
2 tablespoons non-dairy whipped topping
1 pinch ground nutmeg
DIRECTIONS
Step 1
Crack duck egg into a glass bowl. Using an electric wire whip, whip egg until yellow and frothy. Add almond milk, sugar, and vanilla; whip until combined.
Step 2
Divide beverage between two cups. Garnish with non-dairy whipped topping and freshly grated nutmeg. Serve immediately.
Step 3
Place chocolate chips and oil in a microwave safe bowl. Microwave for 30 seconds, stir. Repeat until chips are completely melted when stirred. Pour over bars, smooth chocolate. Refrigerate until set, about 30 minutes. Cut into 8 bars.
