Forget winter's chill! These Vegan Buffalo Cauliflower Bites are a spicy, crispy snack perfect for game nights, turning cold evenings into flavour-packed fun with every delicious bite.

INGREDIENTS

  • 1 large head cauliflower, cut into florets
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1 cup water (or unsweetened almond milk)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3/4 cup hot sauce (e.g., Frank's RedHot)
  • 2 tbsp vegan butter, melted
  • Vegan ranch dressing, for dipping
  • Fresh chives or parsley, chopped (optional garnish)

  • DIRECTIONS

    Step 1
    Prep: Preheat oven to 220C (425F). Line a baking tray with parchment paper.

    Step 2
    Batter: Whisk flour, water, garlic powder, paprika, salt, and pepper until smooth. Dip each floret into batter, letting excess drip off, then place on the tray.

    Step 3
    Bake: Bake for 20 minutes until golden. Flip halfway for even crispness.

    Step 4
    Sauce: Mix hot sauce and melted butter. Toss baked florets in sauce until coated.

    Step 5
    Crisp: Return to oven for 10-15 minutes until glaze is sticky and edges are crisp.

    Step 6
    Serve: Garnish with herbs and serve immediately with vegan ranch.

    Tips: - Extra Crispy? Lightly spray florets with oil before baking.
    - Milder Heat: Reduce hot sauce to 1/2 cup.
    - Make Ahead: Prep batter and cut cauliflower 1 day in advance.
